The rich, gamey burger is packed with classic Greek herbs and spices — such as mint and oregano — which creates a fresh boost of flavor not often found in burger patties. The whole thing is topped with tzatzizki, tomato, onion, and cucumber to balance it all out and bring the recipe together.

Ingredients:
1 1/2 pounds ground lamb
2 garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
10 mint leaves, finely chopped
1 small red onion, grated
1 teaspoon dried oregano
1/4 cup chopped fresh parsley
2 teaspoon ground cumin
1/2 teaspoon paprika
To Serve:
Warm Greek pita bread
2 cups plain Greek yogurt
1/2 cup crumbled feta (for tzatziki sauce)
1/2 lemon, zested (for tzatziki sauce)
2 garlic cloves, smashed and finely chopped (for tzatziki sauce)
2 sprigs fresh mint, leaves cut into chiffonade (for tzatziki sauce)
1 small bunch fresh dill, finely chopped (for tzatziki sauce)
1/2 cucumber, coarsely grated (for tzatziki sauce)
Sliced tomatoes
Sliced Green bell pepper
Sliced cucumbers
Sliced red onions
Directions:
1. Combine the lamb, onion, oregano, garlic, salt, pepper, cumin, paprika, mint, and parsley in a large bowl and, using your clean hands, mix until just combined. Divide evenly into four portions and shape in to large patties.
2. To make Tzatziki sauce, combine the yogurt, feta, lemon zest, garlic, mint, dill and cucumbers; cover and refrigerate.
3. Preheat the grill to 450°F. Grill the burgers to your desired doneness, 4 to 5 minutes per side for medium-rare. Remove the burgers from the grill and let rest for 5 to 10 minutes.
4. Assemble the burgers and pass the toppings and tzatziki sauce alongside.
