Ingredients
1 1/2 pounds ground chuck (20 percent fat content)
1 tablespoon heavy cream
12 slices thick-cut, naturally smoked bacon
1 onion, chopped
Kosher salt
1/2 teaspoon ground black pepper
4 slices American or cheddar cheese
4 hamburger buns, split and toasted
Optional toppings: lettuce leaves, onion, pickle slices and ketchup
Instructions
- Place the beef into a medium mixing bowl. Add onion, heavy cream, salt and pepper. With clean hands, mix the meat well.
- Shape into four patties and lightly press patty into the plate of cracked pepper (on both sides).
- Cook bacon in a skillet over medium-high heat until crisp, 10 to 12 minutes, working in batches if necessary. Drain on paper towels.
- Grill burgers over medium-high heat for about 5 minutes per side. During last minute of cooking time place a slice of cheese on to melt.
- Place burgers on the bottom half of each bun and top with bacon, lettuce, sliced onions, and ketchup as desired. Top with remaining bun halves and serve immediately. Serve pickles on the side.
